Tasting Notes

Very aromatic, intense lime citrus, jasmine and orange blossom. Hints of lemon sorbet and granny smith apple.

Intense but delicate brown lime, kaffir lime and green apple over a wet pebble like texture. Seamless structure with a racy acidity line, that leads to long, clean balanced finish.
Winemaking

Single vineyard, machine harvested, destemmed and gently pressed taking only the first 150 litres per tonne free run juice. Small batch ferments in stainless steel using neutral yeast isolated in Germany. Stabilised filtered and bottled young to capture the purity of Riesling.
Food Pairing

Fresh South Australian oysters or pan-seared King George whiting with lemon and herbs.
