Tasting Notes
Intensely aromatic, bursting with lime, jasmine, and orange blossom, supported by notes of lemon sherbet, sorbet, and crisp green apple. Subtle hints of white florals add lift and freshness.
Vibrant yet refined, showing layers of brown and kaffir lime, green apple, and delicate mineral nuances reminiscent of wet slate and wet river pebbles. The seamless structure is driven by racy, steely acidity that carries through to a long, clean, and beautifully balanced finish.
Winemaking
Sourced from a single vineyard, the grapes are machine-harvested, destemmed, and drained through the press to collect only the free-run juice. Small batches are fermented in stainless steel using a neutral yeast strain. The wine is stabilised, filtered, and bottled young to preserve the fresh, pure expression of Riesling.
Food Pairing
Fresh South Australian oysters or pan-seared King George whiting with lemon and herbs.
