Tasting Notes
Lifted aromas of raison and fig, supported by spice floral and fruitcake notes. Rich & luscious flavours of sultana, dates, raisons, toffee and caramel.
Winemaking
The fruit is left to hang on the vine to become very ripe, hand harvested at around 16-17 baume. Partially fermented on skins then fortified with SVR spirit. The wine is pressed off and transferred to old barrels for maturation.
Food Pairing
Matches well with chocolate, dried fruits or strong cheeses.
