Tasting Notes
Deep and complex, with blackcurrant, cassis and dark plum layered over blackberry and dark cherry. Savoury black olive and liquorice add depth, with cedar oak, char and smoky spice. A lift of mint and subtle herbaceous, saltbush notes provide freshness.
Full-bodied and structured, with plush dark fruit balanced by graphite-like minerality. Blackcurrant and plum are layered with hints of choc-mint and spice. Bright acidity adds lift, while fine, grippy tannins carry a long, savoury finish.
Winemaking
Machine harvested and destemmed without crushing to retain whole berries. Fermented on skins for 7–10 days in a mix of static and open fermenters with inoculated yeast, using twice-daily pump overs. Pressed to tank to dryness, then transferred to French oak barrels (20% new) for malolactic fermentation, with a single rack-and-return. Matured in barrel for 15–18 months before blending, filtration and bottling.
Food Pairing
Pairs beautifully with chargrilled steak, and also complements slow-roasted lamb shoulder or an aged hard cheese.
