Tasting Notes
Expressive aromas of ripe satsuma plum, dark cherry, and blue fruit, layered with spicy undertones, cola, and a hint of funky whole bunch character.
Bright and lively, with a medium weight and silky tannins. Flavours of red berries, game meat, and subtle herbs come together with a succulent texture. The wine has a refreshing snap of acidity, delivering balance, purity, and a thirst-quenching elegance.
Winemaking
Single vineyard, hand harvested fruit. Destemmed with 15% whole bunches and fermented in static fermenters for 7–10 days using inoculated yeast. Gentle pump overs maintained balance and texture without over extraction. Pressed to tank until dry, then matured in barrel through MLF for 9 months before bottling.
Food Pairing
Pairs beautifully with grilled lamb, beef tenderloin, or mushroom risotto.
